Ingredients
  

Chicken

Boneless chicken breasts, thighs, or leftover rotisserie chicken.

Vegetables

Carrots, celery, onions (the classic trio)

Potatoes, zucchini, peas, corn, green beans

Optional: spinach or parsley added at the end

Aromatics & Herbs

Garlic, thyme, bay leaf, oregano, parsley, black pepper

Broth

Low-sodium chicken broth or homemade stock

Optional Add-Ins

Noodles, rice, red pepper flakes, lemon juice, or a drizzle of olive oil

Instructions
 

SautΓ© the Veggies

    Heat a little oil, then add carrots, celery, and onions.

      Cook until soft and aromatic.

        Add Garlic & Herbs

          Drop in garlic, thyme, and oregano.

            Smell that? That’s cozy in a pot.

              Add Chicken & Broth

                Place chicken on top of the veggies, pour in broth, add a bay leaf, and let it simmer gently.

                  Shred the Chicken

                    Remove the chicken after about 20–25 minutes, shred it, then return it to the pot.

                      Add Quick-Cooking Veggies

                        Peas, corn, green beans β€” only a few minutes needed.

                          Taste & Adjust

                            Salt, pepper, a squeeze of lemon, and fresh parsley.

                              Your soup is ready!

                                Slow Cooker & Instant Pot Options

                                Slow Cooker

                                • Add everything except quick-cooking veggies.
                                • Cook 6–7 hours on low.
                                • Add peas or corn at the end.

                                Instant Pot

                                • Cook all ingredients (except quick veggies) on Soup Mode for 10 minutes.
                                • Natural release.
                                • Shred chicken and add vegetables last.
                                Set it and forget it β€” perfect for busy weeknights.
